Tortellini Soup

I absolutely love Tortellini Soup. It can be versatile as to the color of pasta, the kind of vegetables or the type of meat.  My boys love this too.  A pot of this on a cold night with a loaf of french bread and they are as happy as pigs in slop.

I have kept this recipe very simple so that anyone can make it.

Generally I make mine with a Chicken/Asiago/Spinach Sausage that I purchase from Sam’s Warehouse but I have used Beef Chapel Hill Sausage.

The Vegetable element has gone back and forth over the years.  I once boiled broccoli into the soup and have added a frozen bag of mixed veggies but really the spinach is best.  It fortifies the dish with Iron and gives it a wedding soup type of feel.

As far as the tortellini my son says that the sausage tortellini is best.  I will use cheese most of the time because it is easy to acquire at the store.

Ingredients
  • 1 bag of Frozen Cheese Tortellini
  • 32oz Chicken Broth
  • 16 oz Water
  • 2 Tbsp Butter
  • 1 clove garlic, minced
  • 1 med onion, chopped
  • 1 can diced tomatoes with juice
  • 1 can Cannellini Bean, drained
  • 1 lb sausage, chopped into ¼ inch medallions
  • 1 Tbsp dried Italian Seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach
Instructions
  1. Melt Butter into a dutch oven or large sauce pan
  2. Add onions and Garlic
  3. Cook till translucent
  4. Add sausage and cook in the pan till almost brown
  5. Add broth and water
  6. Bring to a boil
  7. Add tomatoes, Cannellini beans, Italian seasoning and salt and pepper
  8. Bring to a boil
  9. Add Tortellini
  10. Allow it to boil for 10 minutes.
  11. Reduce heat and simmer on Medium to low heat for 30 minutes.
  12. Turn off heat and add spinach.
  13. Stir Thoroughly.
  14. Cover with lid for 5 minutes
  15. Serve.
