Homemade Chicken Noodle

It seems that it would be easier to just buy Campbell’s.  Truth be told, it is easy to make it at home and it taste so much better than Campbell’s or any other canned Soup.  It is easy to open a can but are you wasting quality for convenience?  You might want to try to make this and let me know how it turns out for you.

Ingredients
  • Soup Base
  • 2 Tbsp. Butter
  • ¼ cup julienned Carrots
  • 1 large onion
  • 2 stalks celery, minced
  • 4 Chicken Thighs
  • 8 cups Regular Chicken Broth or Stock
  • 1 tsp minced garlic
  • ⅛ tsp pepper
  • ¼ tsp salt
  • 4 Tbsp. Butter
  • Noodles
  • 3 cups All purpose Flour
  • ¼ tsp salt
  • 3 eggs
  • 2 Tbsp milk
Instructions
  1. Soup Base:
  2. Boil chicken Thighs till fully cooked in 4 cups of the chicken broth/stock.
  3. Remove chicken and cut up into bite size pieces
  4. In a frying pan, melt the 2 Tbsp butter and saute the carrots, onion, celery and garlic.
  5. Add vegetables and meat back into the broth, add additional broth and bring to a steady boil (med to high), for 15 minutes
  6. Reduce to simmer and add the 4 Tbsp Butter.
  7. Noodles:
  8. Mix Flour and ¼ tsp salt together. Add eggs and water (1 Tbsp. at a time), just until the dough holds together. Split dough in half and roll half on a floured surface till it is ⅛ an inch thick. Cut into strips that are 2 inches long and about a ¼ of an inch wide. I use a pasta cutter or a pizza slicer to cut mine. Repeat with the other half that has been set aside.
  9. Add noodles to the simmering soup base and cook for 30 minutes longer.
