It is a hot day here in Texas. Over 100 degrees, say the weatherman. So you go to your avocado green fridge, open the creaky door and take out the 20 pound fruit laying on your bottom shelf. The rind is hard, but no chance for the dull knife in your kitchen drawer. You hold the knife up, acting like you know how to measure the sharpness. Then, you place a hand on one end of the green fruit. With the other, you start to saw at it. As soon as the knife breaks the rind, it slide right through with ease. The fruit opens up to the ripest, sweetest red fruit you’ve been dreaming about since your air conditioner went out last night. Salivating, you scoop out a nice ball with a tablespoon and shovel it into your mouth.
What a treat!
I have this affection for watermelon. Whether it is a red fleshed watermelon or (like what I use in my recipe) a yellow flesher. I just love the stuff.
So when I created this refreshing drink, I wanted to take into account the heat that affects us every year during the summer. I wanted to to make something that incorporated one of my favorite summer fruits (figs are #1). I wanted to make something that my family would love this Fourth of July as a treat at the BBQ. So I set out to bring you a delicious Watermelon refresher of sorts.
Firstly, I blended my watermelon and strained it, to catch the seeds. I then put the juice in ice trays and froze them. I also froze some coconut water. Then, I just put a tray of watermelon ice cubes, 4 coconut water ones, 1 whole peach, deseeded, a splash of cherry grenadine, an 7 up in the blender and blended on high. Delicious and refreshing with natural electrolytes!

- 1 tray frozen Watermelon Juice
- 4 Coconut Water ice Cubes
- 1 Peach, deseeded and chopped up
- 1 splash Cherry Grenadine
- 1-1/2 c 7-up
- Blend everything together in a blender until well combined.
