Pappadew Potato Soup

It seems a life time ago but I use to own a restaurant.  Ohhh, the lessons learned from that experience.  The food was fantastic but the location was terrible.  You can be the world’s best chef but if you have a bad location then you have no business, literally.  Anyway, I made a homemade potato soup for the restaurant.  It was so good that folks came back just to eat the soup.  (You will not make margin selling soup, just saying.) Well this is the secret for my successful soup.

***Peppadew is the trademarked brand name of sweet piquanté peppers.  They are a mild pepper and add a lift to potato soup which on its own seems starchy and just a vegetable cream soup to me.  Pappadew work well with any cream cheese dip too and are usually found in the pickle isle at the grocery store.

 

 

 

Pappadew Potato Soup

A smooth soup with a small kick
Ingredients
  • 2 Tbsp. olive oil
  • 3 Tbsp. butter
  • 3 carrots, diced
  • 3 stalks of celery, diced
  • 1 large onion, chopped
  • 8 potatoes, diced
  • 8 cups broth
  • 1/4 cup flour
  • 1 cup heavy whipping cream
  • 1/2 cup milk
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 creole seasoning
  • 4 Tbsp. butter
  • 1/2 (12oz) jar of sweet piquanté peppers also known as pappadew peppers
  • 6 slices of bacon, chopped and cooked
  • 1/2 cup of cheddar cheese
  • chives or parsley for garnish
Instructions
  1. In a dutch oven heat the oil and 3 tbsp of butter. Add carrots, celery, and onion and cook till translucent. Add the potatoes and cook for 2 minutes. Add the broth, salt, pepper and creole seasoning. Boil till potatoes are beyond soft. It takes 30 to 45 minutes
  2. In a bowl add cream, milk and flour and stir.
  3. Reduce heat on the potato/broth mixture to a medium to low simmer. Add the flour cream mixture and stir. Add the pappadews and the 4 Tbsp butter and continue stiring till the soup thickens. it takes about 15 to 25 minutes.
  4. Serve in bowls with bacon and cheddar and garnish
